Traditional Filipino Comfort Food
I've been feeling a bit under the weather (and it may have something to do with all the fun in the sun this past Memorial Day weekend...) so I made a traditional Filipino soup dish - I find it pretty simple and oh so GOOD when you need a little pick-me-up.
What you'll need:
(with help from Pinoy Mix)
* 1 whole chicken (cut into parts or choice cuts of breast, thighs or wings)
* 2 1/2 cups young papaya or chayote [I only used 1 chayote]
* 1/2 cup chilli pepper leaves
* 5 cups water [it depends on how much broth you want]
* 2 tablespoons ginger (chopped)
* 1/2 head garlic (minced)
* 1 medium onion (diced)
* 3 tablespoons oil
* 2 tablespoons patis/fish sauce
* pinch of salt and pepper (to taste)
* rice (optional)
Directions:
1. In a casserole, heat oil and saute' garlic, onion and ginger.
2. Add the chicken and water.
3. Bring to a boil and lower fire, let simmer until chicken is cooked.
4. Pour in patis, salt and pepper to taste.
5. Add in papaya or sayote, allow to cook.
6. When ready to serve, put in dahon ng sili (chilli pepper leaves).
7. Serve hot. Enjoy!
I usually put a bit of rice with the soup, but it's totally up to you!
OH! I almost forgot - I did not have any chilli pepper leaves (and was TOO lazy to go search for them/buy them) so instead, I used spinach leaves! I've heard that you can also use kale... but it's much better if you use the chili pepper leaves.
The spinach was still good though!

8That looks so delicious. You know what is funny, I had some Filipino food this weekend too at the Asian Festival that was going on in my hometown. I gotta try this now.
9HOLY CRAP!!! so that's what it's called! omg, i am so totally going to make this for the bf, i love this stuff! i'd add a tiny bit of sliced jalapeno for an extra kick...hey babe, what's chilli leaves? ..hmmmm lol it's probably something i've eaten a ton of times and not know it!

11Hey haze1 - to tell you the truth... whenever I make Tinola, I usually just use spinach. I'm not sure if you can buy the chili leaves or dahon ng sili at a regular grocery store, but you can also find them at the filipino/asian store. Other than spinach and kale, I've heard of other substitues that you can use as well for the chili leaves such as malunggay or ampalaya leaves. I'm sure there are many others... but the spinach worked well for me. And if you can get your hands on some calamansi - then I would because it tastes good with it as well!
