Guai Thiau Taohoo (Fried Rice Noodles with Beancurd) - Serves 4
Original recipe from Easy-Thai Food.
Ingredients:
300 g (10 oz) rice noodles
200 g (6 1/2 oz) beancurd
250 g (8 oz) soy bean sprouts
1 large onions
3 tb oil
150 g (5 oz) shrimp
2 tb fish sauce
400 ml (13 fl oz) coconut milk
2 tb light soy sauce
1 ts sugar
unsalted peanuts
1. Dice beancurd, wash soy bean sprouts, chop onions.
2. In a pot bring water to boil and cook rice noodles for five minutes. Drain noodles and wash with cold water.
3. Wash shrimp.
4. Heat oil in a wok or a pan. Add onions, soy bean sprout and shrimp and stir-fry for two minutes.
5. Add noodles and fish sauce and continue to stir-fry.
6. Pour in coconut milk, beancurd, soy sauce and sugar. Serve with chopped peanuts.
